Superbowl Sunday Party Recipes

Hello!
TGIF! It's been a busy week at work! Anyways, are you ready for some football? It's Superbowl Sunday this weekend and let's be honest, I'm not interested in watching the game. I just want to watch the commercials, see the half time show with Lady Gaga, and enjoy the food. Ha!
Whether you are staying at home or going to/having your own little Superbowl party, I got you covered! Below are some great recipes to chow down on when you're enjoying the game (or the commercials like me!).
Pull-Apart Cheeseburger Sliders

INGREDIENTS:
  • 2 tbsp. extra-virgin olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 lb. ground beef
  • 1 tsp. yellow mustard
  • 1 tbsp. Worcestershire sauce
  • kosher salt
  • 1 tsp. Freshly ground black pepper
  • 12 slider buns (or dinner rolls)
  • 12 slices cheddar cheese
  • 4 tbsp. butter, melted
  • ¼ tsp. garlic powder
  • 1 tbsp. sesame seeds
DIRECTIONS:
  1. Preheat oven to 350 degrees F.
  2. Heat olive oil in a large skillet over medium heat. Sauté onions until soft. Add garlic and cook until fragrant, about 30 seconds.
  3. Add the ground beef and stir to break up meat. Sauté until cooked through. Stir in mustard and Worcestershire sauce. Season to taste with salt and pepper. Remove skillet from stove top and drain excess fat.
  4. Coat a 9x13 baking dish with cooking spray. Place the bottom halves of the slider buns in the dish. Top with cooked beef mixture. Place a slice of cheese over each slider. Place the top halves of the buns on top.
  5. Brush the tops of the buns with the melted butter. Sprinkle garlic powder and sesame seeds on top.
  6. Bake at 350 until the cheese melts and everything is warmed through, 15-20 minutes.
Buffalo Chicken Meatballs

INGREDIENTS:
  • 1 pound ground chicken
  • 1 cup panko crumbs (or dry bread crumbs)
  • 1 (1 ounce) packet ranch dressing mix
  • 1 large egg
  • 1 clove garlic, minced
  • 1/2 cup buffalo wing sauce (divided)
  • 5-6 green onions, finely chopped
  • 1 teaspoon celery salt
  • 1/2 teaspoon onion flakes
  • salt and pepper, to taste
  • ranch or blue cheese dressing for dipping (or drizzle)
DIRECTIONS:
  1. Preheat oven to 400°.  Line a baking sheet pan with parchment paper (or lightly grease).
  2. In a large bowl combine ground chicken, bread crumbs, ranch mix, egg, garlic, 1 tablespoon buffalo wing sauce, green onions, celery salt, onion flakes, salt and pepper.
  3. Roll mixture into 1 tablespoon balls and place on prepared baking sheet.
  4. Place pan of meatballs in oven for 15 minutes.
  5. Remove from oven and let cool 5 minutes on pan.  Pour remaining hot wing sauce in a shallow bowl, add meatballs and toss to coat, and place meatballs back on baking pan.
  6. Place pan of meatballs back in oven to bake another 10 minutes*.
  7. Serve immediately with ranch or blue cheese dressing.
*You could also coat and keep warm in a slow cooker;  after baking for initial 15 mintues, place meatballs in a slow cooker and add enough buffalo wing sauce to cover meatballs, heat on low at least 30 minutes before serving.
Loaded Tater Tot Skewers

INGREDIENTS:

  • Bag of Tater Tots
  • 8 slices of bacon, chopped
  • 1 cup of cheese, grated
  • 1 tablespoon ranch seasoning
  • skewers
DIRECTIONS:

  1. Cook your tater tots according to directions until golden brown in color. Ours was in a 425 degree oven for 20-30 minutes.
  2. Once you pull them out of the oven, let cool for approximately 2-5 minutes until you can skewer them onto the skewers. I suggest 6-7 per skewer.
  3. Once on the skewers and on the pan, sprinkle ranch dressing over each of tater tots.
  4. Then sprinkle the bacon and then the cheese.
  5. Into the oven for an additional 10 minutes until the cheese is fully melted and golden in color.
  6. Remove from oven and serve.*
*You can serve alone or with your favorite sour cream or ranch dip.

Melty Beer Cheese Dip

INGREDIENTS:

  • 4 cups shredded sharp cheddar cheese
  • 3 T cornstarch
  • 1 12 oz bottle of beer
  • 2 T spicy brown mustard
  • 1 tsp Worcestershire
  • ½ tsp cayenne, or more to taste
  • 1 tsp garlic powder
  • 4 oz cream cheese, cut into 8 pieces
DIRECTIONS:
  1. In a bowl, toss together the shredded cheese and cornstarch.
  2. Add the beer, mustard, Worcestershire and spices to a saucepan. Bring to a simmer over medium heat.
  3. Reduce heat to medium low. Add the cheese and cream cheese in three batches, whisking well after each addition, whisking until fully melted and smooth.
  4. Serve immediately.
Caramel Moose Munch Fancy Popcorn

INGREDIENTS:
  • Pop 3/4 cup unpopped popcorn, remove kernels
  • 1 cup of pecans
  • 1 cup almonds
  • 1 cup of peanuts
  • 2 cups packed brown sugar
  • 1/2 cup light Caro syrup
  • 1 cup butter
  • 1/2 teaspoon of baking soda
  • 1 teaspoon salt
  • 1 teaspoon vanilla
DIRECTIONS:
  1. Pop 3/4 cup unpopped popcorn, take out kernels add 1 cup of pecans, 1 cup almonds and 1 cup of peanuts.
  2. In a sauce pan mix: 2 cups packed brown sugar,1/2 cup light Caro syrup, and 1 cup butter
  3. Melt on medium heat, bring to boil for five minutes.
  4. Take off heat and add: 1/2 teaspoon of baking soda, 1 teaspoon salt, and 1 teaspoon vanilla
  5. Mix, then pour over popcorn in a large bowl and mix until coated.
  6. Separate into two pans and put in a 200° oven bake for one hour stirring every 15 minutes after baked split into thirds pour one bar of melted white chocolate and one bar melted milk chocolate, leave the other plain caramel.
  7. Allow to cool and then mix all together.
All these look sooooo yummy! I really want to try the sliders and the meatballs!
